Crispy Hoisin Chicken Stir-Fry with Broccoli

Ingredients
- 350g Chicken breast, sliced into thin strips
- 2 tbsp Cornflour (cornstarch)
- 1 tbsp Low-sodium soy sauce
- 3 tbsp Hoisin sauce
- 1 tbsp Rice wine vinegar
- 1 tsp Sesame oil
- 1 head Broccoli (approx 300g), cut into small florets
- 1 Red bell pepper, sliced into strips
- 2 cloves Garlic, minced
- 1 tsp Fresh ginger, grated
- 1 tbsp Vegetable oil (for frying)
- Salt and pepper to taste
Instructions
- Prep: Toss the chicken strips in a bowl with cornflour, salt, and pepper until evenly coated. Set aside for 5 minutes.
- Preheat the air fryer to 200°C (400°F). Lightly spray the chicken with oil and air fry for 10-12 minutes, shaking halfway, until golden and crispy.
- While the chicken cooks, prepare the sauce by whisking the hoisin sauce, soy sauce, rice wine vinegar, and sesame oil in a small bowl.
- Heat 1 tbsp of vegetable oil in a large pan or wok over high heat on the hob. Add the broccoli and bell peppers, stir-frying for 4-5 minutes until tender-crisp.
- Add the garlic and ginger to the pan and fry for 1 minute until fragrant.
- Add the crispy chicken to the pan along with the prepared hoisin sauce mixture. Toss rapidly for 1-2 minutes until everything is evenly glazed and piping hot.
- Serve immediately in bowls, optionally garnished with sesame seeds or sliced spring onions.
