Ingredients
- 300g white fish fillets (e.g., cod, snapper), cut into 1-inch cubes
- 150g halloumi cheese, cut into 1-inch cubes
- 1 red bell pepper, deseeded and cut into 1-inch pieces
- 1 yellow bell pepper, deseeded and cut into 1-inch pieces
- 1 tbsp olive oil
- 1 tsp smoked paprika
- 1/2 tsp ground cumin
- 1/4 tsp garlic powder
- Salt and freshly ground black pepper to taste
- Wooden or metal skewers
Instructions
- Prep: If using wooden skewers, soak them in water for at least 30 minutes to prevent burning. Preheat your grill to medium-high heat.
- In a medium bowl, combine the olive oil, smoked paprika, ground cumin, garlic powder, salt, and pepper. Add the fish, halloumi, and bell peppers, tossing gently to coat evenly.
- Thread the fish, halloumi, and bell peppers alternately onto the skewers.
- Grill the skewers for 3-4 minutes per side, or until the fish is cooked through and flaky, the halloumi is golden brown and crispy, and the bell peppers are tender-crisp with some char.
