Ingredients
- 300g ground turkey, 93% lean
- 1 tbsp soy sauce (low sodium)
- 1 tsp fresh ginger, grated
- 1 clove garlic, minced
- 1 tbsp cornstarch
- 1/2 cup fresh mandarin orange juice
- 1 tbsp rice vinegar
- 1 tbsp honey
- 1/2 tsp sesame oil
- 200g asparagus, trimmed and cut into 1-inch pieces
- 1 tbsp olive oil
- 1/4 cup chicken broth (low sodium)
Instructions
- Prep: Mince garlic and grate ginger. Trim and cut asparagus. In a small bowl, whisk together soy sauce, mandarin orange juice, rice vinegar, honey, sesame oil, and cornstarch. Set aside.
- Heat olive oil in a large non-stick skillet or wok over medium-high heat. Add ground turkey and cook, breaking it up with a spoon, until browned, about 5-7 minutes.
- Drain any excess fat from the turkey.
- Add minced garlic and grated ginger to the skillet and cook for 1 minute until fragrant.
- Add asparagus to the skillet and stir-fry for 3-4 minutes until tender-crisp.
- Pour the mandarin orange sauce mixture over the turkey and asparagus. Stir constantly until the sauce thickens and coats the ingredients, about 2-3 minutes.
- Stir in the chicken broth and cook for an additional minute, ensuring everything is well combined and heated through.
