Quick Turkish Pork Shish with Sumac Onions

Ingredients
- 300g Pork tenderloin, cut into 2cm cubes
- 1 tbsp Olive oil
- 1 tsp Smoked paprika
- 1/2 tsp Cumin
- 1 large Red onion, very thinly sliced
- 1 tbsp Sumac
- 1 tbsp Lemon juice
- 1 tbsp Fresh parsley, chopped
- 2 Small wholemeal flatbreads (approx 40g each)
- 100g Greek yogurt (0% fat) for serving
Instructions
- Prep: Soak wooden skewers in water for 10 minutes and thinly slice the red onion.
- In a bowl, toss the pork cubes with olive oil, smoked paprika, cumin, salt, and pepper until well coated.
- Thread the seasoned pork onto the skewers, leaving a little space between each piece for even cooking.
- Preheat your grill (or air fryer) to high heat and cook the skewers for 8-10 minutes, turning halfway, until charred and cooked through.
- While the pork cooks, place the sliced onions in a bowl and massage them with the sumac, lemon juice, and a pinch of salt until they soften and turn vibrant pink.
- Warm the flatbreads briefly under the grill or in the microwave for 20 seconds.
- Serve the pork skewers over the flatbreads, topped generously with the sumac onions, fresh parsley, and a dollop of Greek yogurt.
- Top tip: Rest the pork for 2 minutes after grilling to keep it extra juicy before sliding it off the skewers!
