Ingredients
- 4 large eggs
- 300g fresh spinach
- 4 cloves garlic, thinly sliced
- 2 tbsp extra virgin olive oil (divided)
- 1/2 tsp smoked paprika
- Pinch of red pepper flakes (optional)
- Salt and freshly ground black pepper to taste
Instructions
- Prep: Wash and dry spinach. Thinly slice garlic cloves. Have all ingredients ready for quick cooking.
- Heat 1 tablespoon of olive oil in a large non-stick pan or skillet over medium-high heat. Add the sliced garlic and red pepper flakes (if using). Sauté for 1-2 minutes until fragrant, being careful not to burn the garlic.
- Add the fresh spinach to the pan. Cook, stirring frequently, until the spinach wilts down, about 3-5 minutes. Season with a pinch of salt and pepper. Divide the sautéed spinach evenly between two plates.
- Heat the remaining 1 tablespoon of olive oil in the same pan over medium-high heat until shimmering. Carefully crack two eggs into the pan, ensuring they are not touching. Season with salt, pepper, and a sprinkle of smoked paprika.
- Cook the eggs for 2-3 minutes, undisturbed, allowing the whites to set and the edges to become beautifully crispy. The yolk should remain runny. Repeat with the remaining two eggs.
- Carefully place two crispy fried eggs on top of each mound of sautéed spinach. Drizzle any remaining pan oil over the eggs if desired.
- Serve immediately.
