Ingredients
- 150g lean ground pork
- 1/2 tsp cumin
- 1/4 tsp smoked paprika
- Pinch of cayenne pepper
- Salt and black pepper to taste
- 2 slices gluten-free bread
- 1 tbsp olive oil (divided)
- 200g plain non-fat Greek yogurt
- 1 small garlic clove, minced
- 1 tbsp lemon juice
- 1 tbsp fresh parsley, chopped
- 1 tbsp fresh mint, chopped
Instructions
- Prep: Crumble ground pork into a bowl, season with cumin, smoked paprika, cayenne, salt, and pepper. Tear gluten-free bread into small, cereal-sized pieces. In a separate bowl, combine Greek yogurt, minced garlic, lemon juice, salt, and pepper.
- Cook the pork: Heat 1/2 tbsp olive oil in a non-stick pan over medium-high heat. Add the seasoned pork and cook, breaking it up with a spoon, until deeply browned and crispy, about 7-9 minutes. Drain any excess fat.
- Make the "cereal" crumbs: In another pan or on a baking sheet (for oven/air fryer), toss the bread pieces with the remaining 1/2 tbsp olive oil, a pinch of salt, and pepper. Toast until golden brown and crispy, 5-7 minutes on the hob, 8-10 minutes in an air fryer at 350°F (175°C), or 10-12 minutes in an oven at 375°F (190°C).
- Assemble the bowls: Divide the garlic yogurt equally between two serving bowls. Layer with half of the crispy pork.
- Add the "cereal": Top with half of the toasted gluten-free bread crumbs. Repeat the layering if desired, ensuring an even distribution.
- Garnish: Sprinkle generously with fresh parsley and mint.
- Serve immediately and enjoy the delightful textures!
