Crispy Pork & Nori Breakfast Bowl

Ingredients
- 150g extra-lean ground pork
- 1 tsp low-sodium soy sauce
- 1/2 tsp ginger, grated
- 1/4 tsp garlic powder
- 200g cooked short-grain brown rice (warm)
- 2 large eggs
- 1 sheet nori, shredded
- 1 tsp sesame seeds
- 1/2 tsp sesame oil (for cooking)
- Pinch of salt and pepper
Instructions
- Prep: Crumble ground pork into a bowl. Season with soy sauce, grated ginger, garlic powder, salt, and pepper. Shred the nori sheet into thin strips.
- Heat 1/4 tsp sesame oil in a non-stick pan over medium-high heat. Add the seasoned ground pork and break it up. Cook for 8-10 minutes, stirring occasionally, until deeply browned and crispy.
- While pork cooks, heat the remaining 1/4 tsp sesame oil in another non-stick pan over medium heat. Crack in the eggs and cook sunny-side up or to your preference, seasoning with a pinch of salt and pepper.
- Divide the warm brown rice evenly between two breakfast bowls. Top each with half of the crispy pork.
- Carefully place a fried egg on top of the pork in each bowl.
- Garnish each bowl generously with shredded nori and a sprinkle of sesame seeds.
- Serve immediately and enjoy this flavourful, satisfying breakfast!
