Ingredients
- 4 oz (112g) Lean Ground Turkey
- 1/2 cup (120g) Plain Greek Yogurt (0% fat)
- 1/2 cup (80g) Diced Pineapple (fresh or canned in juice, drained)
- 1 tbsp Fresh Lime Juice
- 1 tsp Grated Fresh Ginger
- 1/4 tsp Turmeric Powder
- 1/4 tsp Cumin Powder
- Pinch of Cayenne Pepper (optional)
- 1 tsp Olive Oil
- 2 tsp Chopped Fresh Cilantro
- Pinch of Salt and Black Pepper
Instructions
- Prep: Dice pineapple, grate ginger, and chop cilantro. In a small bowl, whisk together Greek yogurt, lime juice, grated ginger, turmeric, cumin, and a pinch of salt and pepper. Set aside.
- Heat 1 tsp olive oil in a non-stick pan over medium heat. Add the lean ground turkey and cook, breaking it up with a spoon, until browned and cooked through, about 5-7 minutes.
- Drain any excess fat from the turkey. Stir in a pinch of cayenne pepper (if using) and cook for another minute.
- Divide the spiced turkey equally into two serving bowls. Top each with half of the diced pineapple.
- Spoon the ginger-lime yogurt mixture over the turkey and pineapple in each bowl.
- Garnish with fresh chopped cilantro before serving.
