Ingredients
- 4 oz (113g) lean ground pork
- 1/2 tsp red curry paste
- 1/4 tsp fish sauce (optional, for authentic flavour)
- Pinch of sweetener (optional, like erythritol)
- 2 large eggs
- 2 egg whites
- 1 tbsp skim milk
- Salt and pepper to taste
- 2 whole wheat tortillas (6-inch)
- 1/4 cup chopped fresh cilantro
- 1/4 cup shredded lettuce (optional)
Instructions
- Prep: In a small bowl, combine lean ground pork with 1/4 tsp red curry paste, fish sauce (if using), and sweetener (if using). Mix well and form into two thin patties.
- Air Fry: Place the pork patties in the air fryer basket. Air fry at 375°F (190°C) for 8-10 minutes, flipping halfway, until cooked through and slightly browned. Remove and crumble.
- Scramble Eggs: While pork cooks, whisk eggs, egg whites, skim milk, salt, pepper, and the remaining 1/4 tsp red curry paste in a bowl.
- Cook Eggs: Heat a non-stick pan over medium-low heat. Pour in the egg mixture and scramble gently until cooked to your desired consistency.
- Assemble Wraps: Warm tortillas briefly in the microwave (10-15 seconds) or on a dry pan.
- Fill Wraps: Divide the scrambled eggs and crumbled air-fried pork evenly between the two tortillas. Top with fresh cilantro and shredded lettuce (if using).
