Ingredients
- 200g salmon fillet, skin removed, cut into 1-inch cubes
- 2 large eggs
- 1 tbsp low-fat mayonnaise
- 1 tsp sriracha
- 1/2 tsp lime juice
- 1/4 cup fresh cilantro, chopped
- Pinch of salt and black pepper
- Cooking spray
Instructions
- Prep: Preheat air fryer to 375°F (190°C). Pat salmon bites dry and season with salt and pepper.
- Lightly spray the air fryer basket with cooking spray. Arrange salmon bites in a single layer in the air fryer. Air fry for 8-10 minutes, shaking the basket halfway, until cooked through and crispy.
- While salmon cooks, bring a small pot of water to a rolling boil. Carefully lower the eggs into the boiling water and cook for exactly 6-7 minutes for soft-boiled. Immediately transfer to an ice bath to stop cooking.
- In a small bowl, whisk together low-fat mayonnaise, sriracha, and lime juice to create the zesty mayo.
- Carefully peel the soft-boiled eggs and slice them in half.
- Divide the crispy salmon bites between two plates. Arrange the soft-boiled egg halves alongside. Drizzle generously with the sriracha mayo and garnish with fresh cilantro.
