Ingredients
- 4 oz (112g) salmon fillet
- 1 cup (240g) plain 0% fat Greek yogurt
- 2 fresh figs, sliced
- 1 tablespoon (15ml) honey
- 1/2 teaspoon olive oil
- Pinch of salt
- Pinch of black pepper
- Fresh mint leaves for garnish (optional)
Instructions
- Prep: Preheat your grill to medium-high heat. Lightly brush the salmon fillet with 1/2 teaspoon of olive oil and season with a pinch of salt and black pepper.
- Grill the salmon for 3-4 minutes per side, or until cooked through and flaky. Alternatively, you can air-fry at 375°F (190°C) for 8-10 minutes.
- While the salmon cooks, divide the Greek yogurt evenly into two bowls.
- Slice the fresh figs and arrange them on top of the yogurt in each bowl.
- Once the salmon is cooked, carefully flake it into bite-sized pieces and add it to the yogurt bowls.
- Drizzle 1/2 tablespoon of honey over each bowl.
- Garnish with fresh mint leaves if desired.
