Ingredients
- 170g (6 oz) 85/15 ground beef
- 1 tbsp olive oil
- 1/2 cup (120g) riced cauliflower
- 1/2 tsp chili powder
- 1/4 tsp cumin
- 1/4 tsp garlic powder
- 1/8 tsp onion powder
- Pinch of cayenne pepper (optional)
- Salt and black pepper to taste
- 1/2 medium avocado (approx. 70g), diced
- 2 tbsp full-fat sour cream (approx. 30g)
- 1 tbsp fresh cilantro, chopped (for garnish)
Instructions
- Prep: Dice the avocado, chop the cilantro, and measure out all spices. Ensure your riced cauliflower is ready.
- Heat olive oil in a non-stick skillet over medium-high heat. Add ground beef and cook, breaking it apart with a spoon, until browned and cooked through (about 5-7 minutes). Drain any excess fat.
- Stir in the riced cauliflower, chili powder, cumin, garlic powder, onion powder, and cayenne pepper (if using). Cook for 3-5 minutes, stirring occasionally, until the cauliflower is tender-crisp.
- Season with salt and black pepper to taste. Divide the mixture evenly between two bowls.
- Top each serving with diced avocado and a dollop of sour cream.
- Garnish with fresh chopped cilantro.
