Ingredients
- 150g lamb mince (15% fat)
- 1 tbsp olive oil
- 1.5 tsp za'atar seasoning
- 1/4 tsp salt
- 1/8 tsp black pepper
- 2 large eggs
- 1 ripe avocado
- 1 tbsp fresh parsley, chopped (for garnish)
- 1/2 tbsp white vinegar (for poaching eggs)
Instructions
- Prep: Preheat your air fryer to 190°C (375°F). In a bowl, combine the lamb mince with 1/2 tbsp olive oil, 1.5 tsp za'atar, salt, and pepper. Mix well.
- Form the lamb mixture into small, bite-sized patties (about 6-8 per serving). Place them in the air fryer basket in a single layer. Air fry for 10-12 minutes, flipping halfway, until crispy and cooked through.
- While the lamb cooks, prepare the poached eggs. Fill a small saucepan with about 3 inches of water, add the white vinegar, and bring to a gentle simmer. Carefully crack each egg into a separate small bowl or ramekin.
- Gently slide one egg into the simmering water. Cook for 3-4 minutes for a runny yolk. Remove with a slotted spoon and drain on a paper towel. Repeat for the second egg.
- Halve the avocado, remove the pit, and slice each half into 4-5 thick slices. Arrange the avocado slices on two plates, forming a 'bed' for the lamb and eggs.
- Top the avocado slices with the crispy za'atar lamb bites. Carefully place a poached egg on top of each serving.
- Garnish with fresh chopped parsley.
- Serve immediately.
