Crispy Lamb Mince & Spinach 'Pita' Pizzas

Ingredients
- 2 wholewheat pitas
- 150g lean lamb mince
- 1 tbsp olive oil
- 1 tsp dried oregano
- 1/2 tsp smoked paprika
- Pinch of cinnamon
- 50g fresh spinach
- 30g reduced-fat feta cheese, crumbled
- Salt and freshly ground black pepper to taste
Instructions
- Prep: Preheat your oven to 180°C (350°F) or set your air fryer to 170°C (340°F).
- Heat the olive oil in a pan over medium-high heat. Add the lamb mince and cook, breaking it up with a spoon, until browned and crispy, about 5-7 minutes. Drain any excess fat.
- Stir in the dried oregano, smoked paprika, cinnamon, salt, and pepper. Cook for another minute until fragrant.
- Lightly toast the wholewheat pitas in the oven or air fryer for 2-3 minutes until slightly crisp.
- Carefully spread the crispy lamb mince evenly over each pita. Top with fresh spinach.
- Crumble the reduced-fat feta cheese over the spinach.
- Bake or air fry for another 5-7 minutes, or until the feta is lightly golden and the pitas are crispy at the edges.
- Top tip: For an extra kick, add a pinch of chili flakes to the lamb mince.
