Ingredients
- 250g Lean Ground Lamb (10% fat or less)
- 1 tsp Dried Mint
- 1/2 tsp Cumin
- 1/2 tsp Garlic Powder
- 1/4 tsp Salt and Black Pepper
- 150g Fat-Free Greek Yogurt
- 1 tbsp Fresh Mint, finely chopped
- 1/2 tsp Lemon Juice
- 1 large Cucumber, peeled into ribbons
- 1/2 small Red Onion, thinly sliced
- 2 Small Wholemeal Flatbreads (approx 30g each)
Instructions
- Prep: Pre-heat your grill (broiler) to medium-high and soak 4-6 small wooden skewers in water.
- In a bowl, combine the ground lamb, dried mint, cumin, garlic powder, salt, and pepper; mix well and shape into 10-12 mini oval koftas.
- Thread the mini koftas onto the skewers and place them on a foil-lined tray under the grill for 10-12 minutes, turning halfway until browned and cooked through.
- While the lamb cooks, whisk together the Greek yogurt, fresh mint, and lemon juice in a small bowl to create the dip.
- Use a vegetable peeler to create long, thin ribbons from the cucumber, stopping when you reach the watery seeds.
- Warm the flatbreads briefly under the grill or in the microwave for 20 seconds.
- Serve the hot koftas alongside the refreshing cucumber ribbons, red onion, warm flatbreads, and a generous dollop of the mint yogurt.
