Mediterranean Turkey Mince Pasta with Feta & Spinach

Ingredients
- 120g wholewheat penne pasta
- 250g lean turkey mince (5% fat)
- 2 cloves garlic, minced
- 1 tsp dried oregano
- 1/2 tsp chili flakes (optional)
- 100g fresh baby spinach
- 40g reduced-fat feta cheese, crumbled
- 10 cherry tomatoes, halved
- 1 tbsp olive oil
- 1/2 lemon, juiced
Instructions
- Prep: Finely mince the garlic, halve the cherry tomatoes, and weigh out all ingredients. Bring a pot of salted water to the boil.
- Cook the wholewheat penne in the boiling water for 10-12 minutes or until al dente. Reserve 1/4 cup of pasta water before draining.
- While the pasta cooks, heat the olive oil in a large pan over medium-high heat on the hob.
- Add the turkey mince to the pan, breaking it up with a wooden spoon, and brown for 5-6 minutes until fully cooked.
- Stir in the garlic, oregano, and chili flakes, cooking for another minute until fragrant. Add the cherry tomatoes and cook until softened.
- Toss in the fresh spinach and the cooked pasta. Pour in the reserved pasta water and lemon juice, tossing everything together until the spinach has wilted.
- Divide the pasta into two bowls and top each with the crumbled feta cheese.
- Top tip: Zest the lemon before juicing it and sprinkle the zest over the finished dish for an extra pop of citrus aroma!
