Quick Bibimbap Bowl with Ground Pork & Spinach

Ingredients
- 200g lean ground pork
- 2 cups fresh spinach
- 2 large eggs
- 1 cup cooked short-grain brown rice
- 2 tsp soy sauce
- 1 tsp sesame oil
- 1/2 tsp gochujang (Korean chili paste)
- 1/4 tsp minced garlic
- Pinch of black pepper
- 1 tsp vegetable oil
Instructions
- Prep: Prepare all ingredients. In a small bowl, mix soy sauce, sesame oil, gochujang, minced garlic, and black pepper for the sauce. Set aside.
- Cook Pork: Heat vegetable oil in a pan on the hob over medium-high heat. Add ground pork and cook, breaking it up with a spoon, until browned and cooked through (about 5-7 minutes). Drain any excess fat.
- Season Pork: Add half of the prepared sauce to the cooked pork and stir to combine. Cook for another minute.
- Cook Spinach: While the pork is cooking, wilt the spinach in the microwave for 1-2 minutes until tender. Drain any excess water.
- Assemble Bowls: Divide the cooked brown rice between two microwave-safe bowls. Top each with seasoned ground pork and wilted spinach.
- Cook Eggs: Carefully crack an egg into a small, microwave-safe ramekin or bowl. Microwave on high for 30-60 seconds, or until the whites are set and the yolk is still runny. Repeat for the second egg.
- Finish & Serve: Gently place a runny egg on top of each bowl. Drizzle the remaining sauce over the bowls. Serve immediately.
- Top tip: For an extra kick, sprinkle with sesame seeds and a pinch of red pepper flakes before serving.
