Crispy Smashed Chickpea & Red Pepper Toast

Ingredients
- 1 can (15 oz) chickpeas, drained and rinsed
- 1/2 red bell pepper, finely diced
- 2 tbsp fresh parsley, chopped
- 1 tbsp fresh chives, chopped
- 1 tbsp lemon juice
- 1 tsp smoked paprika
- 1/2 tsp garlic powder
- 1/4 tsp black pepper
- Pinch of salt
- 4 slices (100g) whole wheat bread
- 2 tbsp olive oil
- 2 slices (50g) lean pork loin, thinly sliced and finely diced (for crispy "pork bits")
Instructions
- Prep: Preheat your air fryer to 375°F (190°C). Drain and rinse the chickpeas. Finely dice the red bell pepper, parsley, chives, and pork loin.
- Air Fry Pork: Toss the diced pork loin with 1/2 tablespoon of olive oil. Air fry for 8-10 minutes, shaking halfway, until crispy and golden brown. Set aside.
- Prepare Chickpea Smash: In a medium bowl, combine the drained chickpeas, diced red bell pepper, chopped parsley, chopped chives, lemon juice, smoked paprika, garlic powder, black pepper, and salt. Mash with a fork until mostly smooth but still with some texture.
- Prepare Toast: Lightly brush both sides of the whole wheat bread slices with the remaining 1.5 tablespoons of olive oil. Air fry for 4-6 minutes, flipping halfway, until golden and crispy.
- Assemble: Divide the smashed chickpea mixture evenly among the four crispy toast slices. Top each with the crispy air-fried pork bits.
- Serve: Arrange on plates and serve immediately.
