Ingredients
- 2 large eggs
- 50g paneer, cubed
- 50g fresh spinach
- 1/4 small onion, finely chopped
- 1/2 green chili, finely chopped (optional)
- 1/4 tsp ginger-garlic paste
- 1/4 tsp turmeric powder
- 1/4 tsp cumin powder
- Pinch of garam masala
- 1 tsp olive oil
- 1 slice wholemeal toast (30g)
- Salt to taste
- Fresh coriander for garnish (optional)
Instructions
- Prep: Finely chop onion, green chili (if using), and spinach. Cube the paneer. Whisk eggs with salt.
- Heat olive oil in a non-stick pan over medium heat on the hob. Add chopped onion and sauté until translucent (2-3 minutes).
- Add ginger-garlic paste, green chili (if using), turmeric powder, and cumin powder. Sauté for 30 seconds until fragrant.
- Add the cubed paneer and cook for 2-3 minutes, stirring gently, until lightly browned.
- Stir in the fresh spinach and cook until wilted, about 1-2 minutes.
- Pour in the whisked eggs and gently scramble until cooked to your desired consistency. Stir in the garam masala.
- While eggs are cooking, toast the wholemeal bread.
- Serve the spiced scrambled eggs with the wholemeal toast. Garnish with fresh coriander if desired.
