Savory Breakfast Galette with Asparagus and Gruyere

Ingredients
- 1 sheet (around 100g) ready-made puff pastry (all-butter preferred)
- 120g thin asparagus spears, trimmed
- 60g Gruyere cheese, grated
- 2 large eggs
- 2 tbsp milk
- 1/4 tsp Dijon mustard
- Pinch of salt and black pepper
- 1 tbsp olive oil
Instructions
- Prep: Preheat your oven to 200°C (400°F). Line a baking sheet with parchment paper.
- On the prepared baking sheet, gently unroll the puff pastry. If it's a square, you can slightly stretch it into a rough circle. Prick the center of the pastry several times with a fork.
- In a small bowl, whisk together the eggs, milk, Dijon mustard, salt, and pepper.
- Scatter the grated Gruyere cheese over the center of the pastry, leaving a 1.5-inch border around the edges.
- Arrange the asparagus spears on top of the cheese.
- Carefully pour the egg mixture over the asparagus and cheese.
- Fold the edges of the pastry inward over the filling, crimping gently to create a rustic crust.
- Bake for 20-25 minutes, or until the pastry is golden brown and puffed, and the filling is set.
- Top tip: For an extra golden crust, brush the exposed pastry with a little milk before baking.
