Grilled Halloumi & Mediterranean Vegetable Towers with Poached Eggs

Ingredients
- 1 medium courgette
- 1 small aubergine
- 1 red bell pepper
- 1 yellow bell pepper
- 150g halloumi cheese
- 2 large eggs
- 1 tbsp olive oil
- Salt and freshly ground black pepper to taste
- Fresh parsley for garnish
Instructions
- Prep: Slice the courgette and aubergine into 0.5cm thick rounds. Deseed and slice the bell peppers into similar-sized pieces. Slice the halloumi into 0.5cm thick slabs.
- Heat a grill pan or outdoor grill over medium-high heat. Lightly brush the courgette, aubergine, and bell peppers with olive oil and season with salt and pepper.
- Grill the vegetables for 3-4 minutes per side, or until tender and lightly charred. Grill the halloumi for 2-3 minutes per side, until golden brown and slightly softened.
- While the vegetables and halloumi are grilling, poach the eggs. Fill a small saucepan with about 3 inches of water and bring to a gentle simmer. Carefully crack each egg into a separate small bowl, then gently slide them into the simmering water. Cook for 3-4 minutes for a runny yolk.
- To assemble, alternate stacking grilled vegetables and halloumi slices on two plates, forming two towers. Top each tower with a freshly poached egg.
- Garnish with fresh parsley and an extra grind of black pepper if desired.
