Crispy Za'atar Pitta & Halloumi Brunch Salad

Ingredients
- 100g Halloumi cheese
- 1 wholemeal pitta bread (approx. 60g)
- 1 tsp Za'atar seasoning
- 100g Mixed greens (e.g., spinach, rocket)
- 1/2 cucumber (approx. 100g)
- 2 tbsp Fresh lemon juice
- 1 tbsp Extra virgin olive oil
- 1/4 tsp Dried oregano
- Pinch of salt
- Pinch of black pepper
Instructions
- Prep: Preheat your oven or air fryer to 200°C (400°F). Slice the pitta bread into small triangles or squares. Cube the halloumi cheese into 1.5 cm pieces. Wash and chop the cucumber.
- Toss the pitta pieces with 1/2 tsp olive oil and 1/2 tsp za'atar seasoning. Spread them on a baking tray or in the air fryer basket.
- Bake or air fry the pitta for 5-7 minutes, or until golden and crispy. Set aside.
- Heat a non-stick pan over medium-high heat. Add the halloumi cubes and cook for 2-3 minutes per side, until deeply golden and crispy.
- While the halloumi cooks, whisk together the lemon juice, remaining 1/2 tbsp olive oil, oregano, salt, and pepper in a small bowl to create the dressing.
- In a large bowl, combine the mixed greens and chopped cucumber. Drizzle with the lemon dressing and toss gently to coat.
- Divide the dressed salad between two plates. Top with the crispy halloumi and the za'atar pitta croutons.
