Simple Masala Tofu & Sweet Potato Hash with Fried Egg

Ingredients
- 200g firm tofu, pressed and crumbled
- 1 medium sweet potato (approx. 200g), peeled and diced into ½-inch cubes
- ½ red onion, finely diced
- ½ green bell pepper, finely diced
- 1 tbsp olive oil
- 1 tsp garam masala
- ½ tsp turmeric powder
- ¼ tsp cayenne pepper (optional, adjust to taste)
- Pinch of salt and black pepper
- 2 large eggs
- Fresh cilantro, chopped (for garnish)
Instructions
- Prep: Press tofu for 15-20 minutes to remove excess water. Peel and dice sweet potato, red onion, and green bell pepper. Crumble the pressed tofu.
- Heat 1 tbsp olive oil in a large non-stick pan or skillet over medium-high heat. Add diced sweet potatoes and cook for 8-10 minutes, stirring occasionally, until tender-crisp and slightly browned.
- Add diced red onion and green bell pepper to the pan. Cook for another 3-5 minutes until softened.
- Stir in the crumbled tofu, garam masala, turmeric, cayenne pepper (if using), salt, and black pepper. Cook for 5-7 minutes, stirring gently, until tofu is heated through and lightly browned.
- While the hash finishes cooking, fry or poach the two eggs to your preference.
- Divide the hash evenly between two plates. Top each serving with a fried egg.
- Garnish generously with fresh chopped cilantro.
