Curried Salmon & Banana Yogurt Fusion Bowl

Ingredients
- 4 oz (approx. 113g) salmon fillet, skin off
- 1 tsp mild curry powder
- 1/4 tsp salt
- 1/8 tsp black pepper
- 1 cup (240g) plain 0% fat Greek yogurt
- 1 medium ripe banana (approx. 100g), sliced
- 1 tsp black sesame seeds
- 1/2 tsp olive oil
Instructions
- Prep: Preheat the air fryer to 375°F (190°C). Pat salmon dry. In a small bowl, mix curry powder, salt, and pepper. Rub the mixture evenly over both sides of the salmon fillet.
- Air Fry Salmon: Lightly grease the air fryer basket with olive oil. Place the seasoned salmon in the air fryer and cook for 10-12 minutes, or until cooked through and easily flaked with a fork.
- Flake Salmon: Once cooked, carefully remove the salmon and let it cool slightly. Using two forks, gently flake the salmon into small pieces.
- Assemble Bowls: Divide the Greek yogurt evenly between two bowls.
- Add Toppings: Top each bowl with the flaked curried salmon and sliced banana.
- Garnish: Sprinkle black sesame seeds over each bowl just before serving.
