Ingredients
- 300g cod fillets
- 2 tbsp gochugaru (Korean chili flakes)
- 1 tbsp soy sauce (low sodium)
- 1 tsp sesame oil
- 1 tsp minced garlic
- 0.5 tsp ginger powder
- 1 bunch fresh asparagus (about 250g)
- 1 tbsp olive oil
- Salt to taste
- Freshly ground black pepper to taste
- Optional: sesame seeds for garnish
Instructions
- Prep: Preheat your oven to 200°C (400°F). Lightly grease a baking sheet.
- In a small bowl, whisk together the gochugaru, soy sauce, sesame oil, minced garlic, and ginger powder to create the gochugaru paste.
- Pat the cod fillets dry with paper towels and place them on the prepared baking sheet. Generously spread the gochugaru paste over both sides of the fish.
- Trim the woody ends off the asparagus spears. In a medium bowl, toss the asparagus with olive oil, salt, and pepper until evenly coated. Arrange the asparagus on the same baking sheet alongside the fish.
- Bake for 12-15 minutes, or until the fish is opaque and flakes easily with a fork, and the asparagus is tender-crisp.
- Carefully transfer the roasted fish and asparagus to serving plates. Garnish with sesame seeds if desired.
- Top tip: For an extra layer of flavor, a squeeze of fresh lemon juice over the fish and asparagus before serving truly elevates the dish.
