Ingredients
- 2 (100g each) haddock fillets
- 1 tbsp olive oil
- Salt and black pepper to taste
- 2 heads pak choi, quartered lengthwise
- 1 tbsp unsalted butter
- 2 cloves garlic, minced
- 1-inch ginger, grated
- 1 small red chili, finely sliced (optional)
- 1 tbsp sugar-free fish sauce
- 1/2 cup full-fat coconut milk (canned, unsweetened)
- 1/4 cup chicken broth (low sodium)
- 1 tbsp fresh lime juice
- 1 tbsp fresh cilantro, chopped
- 1/2 tsp keto-friendly red curry paste (check ingredients for sugar)
- Optional: pinch of swerve/erythritol to balance flavor
Instructions
- Prep: Pat haddock fillets dry and season generously with salt and pepper. Quarter the pak choi lengthwise.
- Air-Fry Haddock: Preheat air fryer to 375°F (190°C). Lightly brush haddock with olive oil. Air fry for 10-12 minutes, flipping halfway through, until flaky and cooked through.
- Sauté Aromatics: While haddock cooks, melt butter in a small saucepan over medium heat. Add minced garlic, grated ginger, and sliced chili (if using). Sauté for 1 minute until fragrant.
- Build the Sauce: Stir in the keto-friendly red curry paste and cook for another minute. Pour in the coconut milk and chicken broth. Bring to a gentle simmer, then reduce heat to low.
- Simmer Sauce: Let the sauce gently simmer for 5-7 minutes, allowing it to thicken slightly. Stir in the sugar-free fish sauce and lime juice. Taste and adjust seasoning; add a pinch of sweetener if needed.
- Steam Pak Choi: While the sauce simmers, steam the quartered pak choi in a microwave steamer or a pot with a steamer basket for 3-4 minutes until tender-crisp. Alternatively, sauté briefly in the same saucepan after removing sauce.
- Serve: Divide the steamed pak choi between two plates. Top with the air-fried haddock fillets. Spoon the creamy Tom Yum sauce generously over the fish and pak choi. Garnish with fresh cilantro.
- Top tip: For an extra zing, add a few drops of sesame oil to the sauce just before serving. Ensure your red curry paste has no added sugar for strict keto.
