Ingredients
- 2 (4oz/113g) haddock fillets
- 2 tbsp unsalted butter
- 1 tbsp lime juice
- 1 clove garlic, minced
- 1/2 tsp ginger, grated
- 1/4 tsp red pepper flakes (optional)
- 1/2 head broccoli (about 2 cups florets)
- 1 tbsp olive oil
- Salt and black pepper to taste
- 2 tbsp fresh cilantro, chopped (for garnish)
Instructions
- Prep: Preheat your oven to 400°F (200°C). Wash and pat dry the haddock fillets. Cut broccoli into small florets.
- Roast Broccoli: In a medium bowl, toss the broccoli florets with olive oil, salt, and pepper. Spread them in a single layer on a baking sheet. Roast for 15-20 minutes, or until tender-crisp and slightly charred.
- Prepare Garlic-Lime Butter: While the broccoli roasts, melt the butter in a small saucepan over low heat or in the microwave. Stir in the lime juice, minced garlic, grated ginger, and red pepper flakes (if using).
- Bake Haddock: Place the haddock fillets on a separate oven-safe dish or the same baking sheet as the broccoli (if space allows). Pour the garlic-lime butter mixture evenly over the fillets.
- Bake Haddock: Bake the haddock for 10-15 minutes, or until it's opaque and flakes easily with a fork. Cooking time will vary based on thickness.
- Serve: Divide the roasted broccoli and baked haddock between two plates. Garnish with fresh chopped cilantro.
