Ingredients
- 300g lean ground beef
- 1 tbsp olive oil
- 1/2 cup kimchi, chopped
- 2 cloves garlic, minced
- 1 tbsp ginger, grated
- 1 tbsp fish sauce
- 1 tsp sriracha (optional, for extra spice)
- 1/2 head butter lettuce, separated into leaves
- 1/4 cup fresh cilantro, chopped
- 1/4 cup fresh mint, chopped
- 1/4 cup chopped roasted peanuts (optional, for garnish)
Instructions
- Prep: Wash and separate lettuce leaves. Chop kimchi, mince garlic, grate ginger, and chop cilantro and mint. If using, chop peanuts.
- Heat olive oil in a large skillet or wok over medium-high heat. Add ground beef and cook, breaking it apart with a spoon, until browned. Drain any excess fat.
- Add minced garlic and grated ginger to the skillet and cook for 1 minute until fragrant.
- Stir in the chopped kimchi, fish sauce, and sriracha (if using). Cook for 3-5 minutes, allowing the flavors to meld.
- Remove from heat. Stir in fresh cilantro and mint.
- To assemble, spoon the beef and kimchi mixture into the lettuce cups. Garnish with chopped roasted peanuts if desired.
