Ingredients
- 2 (4oz/113g each) cod fillets
- 2 tbsp natural unsweetened peanut butter (keto-friendly, no added sugar)
- 1 tbsp sugar-free soy sauce or tamari
- 1 tsp rice vinegar
- 1/2 tsp ginger paste
- 1/4 tsp garlic powder
- Pinch of red pepper flakes (optional)
- 1 tbsp water
- 2 cups (approx. 180g) broccoli florets
- 1 tbsp olive oil
- Salt and black pepper to taste
- 2 tbsp chopped unsalted peanuts (for garnish, optional)
Instructions
- Prep: Preheat the air fryer to 375°F (190°C). In a small bowl, whisk together peanut butter, sugar-free soy sauce, rice vinegar, ginger paste, garlic powder, red pepper flakes (if using), and 1 tbsp water until smooth. Pat cod fillets dry with paper towels.
- Air Fry Cod: Brush or spoon half of the peanut sauce over the cod fillets. Place cod in the air fryer basket in a single layer. Air fry for 10-12 minutes, or until cooked through and flaky, flipping halfway through and brushing with remaining sauce.
- Steam Broccoli: While the cod cooks, toss broccoli florets with olive oil, salt, and pepper. Place in a microwave-safe bowl with 1-2 tablespoons of water, cover, and microwave on high for 3-4 minutes, or until tender-crisp.
- Assemble: Carefully transfer the cooked cod and steamed broccoli to serving plates.
- Garnish: Sprinkle with chopped peanuts, if desired.
