Ingredients
- 2 (4oz/113g each) tilapia fillets
- 2 tbsp coconut oil, divided
- 1/2 small head savoy cabbage (about 200g), thinly sliced
- 1/4 cup fresh Thai basil leaves
- 1 red chili, deseeded and thinly sliced (optional)
- 1 clove garlic, minced
- 1 tbsp fish sauce
- 1 tbsp lime juice
- 1/2 tsp erythritol (or other keto-friendly sweetener)
- Salt and black pepper to taste
Instructions
- Prep: Pat tilapia fillets dry. Slice cabbage thinly, mince garlic, slice chili, and pick basil leaves.
- Heat 1 tablespoon of coconut oil in a non-stick pan over medium-high heat. Season tilapia fillets with salt and pepper, then cook for 3-4 minutes per side, until cooked through and flaky. Remove from pan and set aside.
- In the same pan, add the remaining 1 tablespoon of coconut oil. Add minced garlic and sliced chili (if using), and stir-fry for 30 seconds until fragrant.
- Add the thinly sliced savoy cabbage to the pan. Stir-fry for 3-5 minutes until tender-crisp. Do not overcook.
- Stir in the fish sauce, lime juice, and erythritol. Toss well to combine.
- Remove the pan from heat and stir in the fresh Thai basil leaves until just wilted.
- Serve the pan-seared tilapia fillets immediately alongside the stir-fried savoy cabbage. Garnish with extra basil or chili if desired.
