Simple Air-Fried Thai White Fish & Asparagus

Ingredients
- 2 (4oz/115g) white fish fillets (e.g., cod, tilapia)
- 1 tbsp coconut oil, melted
- 1 tbsp sugar-free fish sauce
- 1 tbsp lime juice
- 1 tsp erythritol or monk fruit sweetener
- 1/2 tsp ginger powder
- 1/4 tsp garlic powder
- 1/4 tsp red pepper flakes (optional)
- 1 bunch (approx. 10 spears) asparagus, tough ends trimmed
- Salt and black pepper to taste
- Fresh cilantro for garnish (optional)
Instructions
- Prep: Preheat air fryer to 400°F (200°C). Pat fish fillets dry with paper towels. In a small bowl, whisk together melted coconut oil, sugar-free fish sauce, lime juice, erythritol, ginger powder, garlic powder, and red pepper flakes.
- Lightly spray the air fryer basket with cooking oil. Place the dried fish fillets in the basket.
- Brush half of the Thai glaze over the fish fillets. Season the asparagus with salt and pepper, then add them to the air fryer basket alongside the fish.
- Air fry for 8 minutes. Flip the fish and asparagus, then brush the remaining glaze over the fish.
- Continue to air fry for another 5-7 minutes, or until the fish is cooked through and flakes easily with a fork, and the asparagus is tender-crisp.
- Serve immediately, garnished with fresh cilantro if desired.
