Ingredients
- 300g white fish fillets (e.g., cod, halibut, tilapia)
- 1 tbsp olive oil
- 160g broccolini, trimmed
- Salt and freshly ground black pepper to taste
- For the "Peanut-Free" Sauce:
- 2 tbsp almond butter (unsweetened)
- 1 tbsp tamari or coconut aminos
- 1 tbsp lime juice
- 1 tsp sriracha (optional, for a kick)
- 1/2 tsp fresh ginger, grated
- 1/4 cup warm water (or coconut milk for richer sauce)
Instructions
- Prep: Pat the fish fillets dry with paper towels and season both sides with salt and pepper. Trim the broccolini. Whisk together all "Peanut-Free" Sauce ingredients until smooth, adding water or coconut milk gradually to reach desired consistency.
- Heat 1 tbsp olive oil in a large non-stick pan or cast-iron skillet over medium-high heat.
- Once the pan is hot, carefully place the fish fillets skin-side down (if applicable) and sear for 3-4 minutes until golden brown and crispy. Flip and cook for another 2-3 minutes, or until cooked through and flakes easily.
- While the fish cooks, steam the broccolini in a microwave-safe dish with a splash of water for 2-3 minutes, or until tender-crisp. Alternatively, sauté it lightly in a separate pan.
- Divide the pan-seared white fish and steamed broccolini evenly between two plates.
- Spoon the Thai "Peanut-Free" Sauce generously over the fish and broccolini.
- Serve immediately and enjoy your vibrant, keto-friendly dinner.
