Ingredients
- 2 (4oz/113g each) salmon fillets
- 2 tbsp sumac
- 1 tbsp olive oil
- 1/2 block (2oz/56g) halloumi cheese, sliced into 1/2-inch thick pieces
- 4 cups mixed greens (e.g., rocket, spinach, romaine)
- 1/2 cup cherry tomatoes, halved
- 1/4 cup cucumber, diced
- 2 tbsp fresh lemon juice
- 1 tsp extra virgin olive oil
- Salt and freshly ground black pepper to taste
Instructions
- Prep: Pat salmon fillets dry and sprinkle generously with sumac, salt, and pepper. Lightly brush with 1 tbsp olive oil. Slice halloumi.
- Air Fry Salmon: Preheat air fryer to 375°F (190°C). Place salmon in the air fryer basket and cook for 12-15 minutes, or until cooked through and flaky. Cooking time may vary based on thickness.
- Air Fry Halloumi: While salmon cooks, place halloumi slices in the air fryer basket (you might need to do this in batches after the salmon, or use a second basket if available). Air fry for 5-7 minutes, flipping halfway, until golden brown and slightly crispy.
- Prepare Dressing: In a small bowl, whisk together lemon juice, 1 tsp extra virgin olive oil, salt, and pepper.
- Assemble Salad: In a large bowl, combine mixed greens, cherry tomatoes, and cucumber.
- Serve: Flake the cooked salmon over the salad, add the air-fried halloumi slices, and drizzle with the lemon dressing. Serve immediately.
