Ingredients
- 300g lean lamb loin, thinly sliced
- 2 tbsp gluten-free tamari
- 1 tbsp rice vinegar
- 1 tbsp cornstarch (gluten-free)
- 1 tbsp fresh ginger, grated
- 4 cloves garlic, minced
- 1 tbsp sesame oil
- 2 tsp olive oil
- 400g bok choy, stems separated and chopped, leaves roughly chopped
- 1/2 red bell pepper, thinly sliced
- 1/4 cup chicken broth (gluten-free)
- 1/2 tsp red pepper flakes (optional)
Instructions
- Prep: Slice lamb thinly, grate ginger, mince garlic, chop bok choy and bell pepper. In a bowl, marinate lamb with gluten-free tamari, rice vinegar, gluten-free cornstarch, grated ginger, and minced garlic for at least 10 minutes.
- Heat olive oil in a large wok or skillet over medium-high heat. Add the marinated lamb and stir-fry for 3-4 minutes until browned and cooked through. Remove lamb from the wok and set aside.
- Add bok choy stems and red bell pepper to the wok, stir-fry for 2-3 minutes until slightly tender-crisp. Add bok choy leaves and stir-fry for another minute.
- Pour in chicken broth and red pepper flakes (if using). Bring to a simmer, then return the cooked lamb to the wok. Toss everything together to combine.
- Drizzle with sesame oil and toss once more. Serve immediately with a side of gluten-free rice if desired (not included in calorie count).
