Ingredients
- 2 (4 oz/113g each) salmon fillets, skin on or off
- 4 cups fresh spinach
- 1 tablespoon olive oil
- 1 teaspoon za'atar spice blend
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
- Pinch of red pepper flakes (optional)
- Juice of 1/2 lemon
- Salt and freshly ground black pepper to taste
Instructions
- Prep: Pat salmon fillets dry. In a small bowl, mix olive oil, za'atar, garlic powder, onion powder, red pepper flakes (if using), salt, and pepper.
- Rub the spice mixture evenly over both sides of the salmon fillets.
- Divide the fresh spinach evenly between two microwave-safe bowls. Place one seasoned salmon fillet on top of the spinach in each bowl.
- Cover each bowl loosely with a microwave-safe lid or microwave-safe plastic wrap, leaving a small vent.
- Microwave one bowl at a time on high for 3-5 minutes, or until the salmon is cooked through and flakes easily with a fork, and the spinach is wilted. Cooking time may vary depending on your microwave's power and salmon thickness.
- Carefully remove bowls from the microwave. Squeeze fresh lemon juice over each salmon and spinach bowl before serving.
