Ingredients
- 250g fresh salmon fillet, skinless and boneless
- 100g fresh spinach
- 1 large egg
- 2 tbsp gluten-free oat flour
- 1 tsp dried dill
- 1/2 tsp garlic powder
- Salt and freshly ground black pepper to taste
- 2 tbsp olive oil (for pan-frying)
- 4 tbsp plain Greek yogurt (2% fat)
- 1 tbsp lemon juice
- Fresh parsley, chopped (for garnish, optional)
Instructions
- Prep: Pat the salmon dry and finely chop or flake it into a medium bowl. Roughly chop the spinach and add to the salmon.
- Add the egg, gluten-free oat flour, dried dill, garlic powder, salt, and pepper to the salmon and spinach mixture. Mix well to combine.
- Form the mixture into 4 equal fritters. They might be soft, so handle gently.
- Heat the olive oil in a non-stick pan over medium heat. Carefully place the fritters in the hot pan.
- Cook for 4-5 minutes per side, until golden brown and cooked through. Ensure internal temperature of salmon reaches 145°F (63°C).
- While fritters cook, mix the Greek yogurt with lemon juice, a pinch of salt, and pepper for a simple cooling sauce.
- Serve the hot fritters immediately with a dollop of the lemon-yogurt sauce and a sprinkle of fresh parsley, if desired.
