- 2 (100g each) salmon fillets, skinless and boneless
- 4 cups fresh spinach
- 2 tbsp olive oil
- 1 tsp ground cumin
- 0.5 tsp smoked paprika
- 0.25 tsp turmeric
- Pinch of cayenne pepper (optional)
- Salt and black pepper to taste
- 2 lemon wedges
Instructions
- Prep: Pat salmon fillets dry. In a small bowl, mix olive oil, cumin, smoked paprika, turmeric, cayenne pepper (if using), salt, and black pepper to create the spice rub.
- Rub the spice mixture evenly over both sides of the salmon fillets.
- Divide the fresh spinach evenly between two microwave-safe bowls.
- Place one seasoned salmon fillet on top of the spinach in each bowl.
- Microwave each bowl separately on high for 2.5-3 minutes, or until the salmon is cooked through and flakes easily, and the spinach is wilted. Cooking times may vary depending on your microwave.
